    • 225g bulghur wheat
    • 1 cucumber, peeled and seeded
    • 450g tomatoes, peeled and seeded
    • 8 spring onions, finely diced
    • 2 large handfuls chopped parsley
    • 6 tablespoons lemon juice
    • 8 tablespoons extra virgin olive oil
    • Salt
    • Freshly Ground Black Pepper


    1. Liberally cover the bulgar wheat with boiling water and soak for 30 minutes. Finely dice the cucumber and tomatoes. Place in a large bowl with the spring onions and parsley.
    2. Drain the bulgur wheat and squeeze dry. Add to the cucumber mix, dress with lemon juice and olive oil, season to taste and serve.
