    Tarakihi with Lemon and Caper Dressing

    Tarakihi, also known as ocean bream, has firm, moist white flesh and is suitable for all methods of cooking, especially frying.

    Serves: 4


    • 5tbsp olive oil
    • Juice of ½ lemon
    • Finely grated zest of 1 lemon
    • Salt & freshly ground black pepper
    • 2tbsp capers, drained and roughly chopped
    • 2tbsp garlic chives, chopped
    • 4 tarakihi steaks, each weighing approximately 175g
    • Butter for frying


    1. Whisk oil into lemon juice. Add lemon zest, seasoning, capers and chives.
    2. Season fish and pan-fry in butter for 3-4 minutes each side or until thoroughly cooked. Remove from pan and keep warm.
    3. Warm the lemon dressing in the frying pan and pour over the fish. Serve with couscous.
