    Ten Minute Fish with Tomatoes and Herbs

    • Total time: 20 minutes 20 minutes

    Serves: 4


    • 2 tbsp extra virgin olive oil
    • 1 tbsp finely chopped parsley
    • 1 tbsp thyme sprigs
    • Sea salt and freshly ground pepper
    • 4 thick fillets of white fish, such as cod, halibut, or sea bass (about 200g each)
    • 200g cherry tomatoes


    1. Preheat the oven to 230C/gas mark 8. Place a heavy baking tray in the oven (it may buckle slightly in the heat). Meanwhile, combine the olive oil, parsley, thyme, sea salt and pepper in a bowl. Coat each fish fillet well in the mixture, set aside and coat the tomatoes in the remaining oil mixture.
    2. When very hot, remove the tray from the oven, and place the fish and tomatoes on it. Return it to the top shelf of the oven and bake for 10 minutes. For thin fillets, test after 5-6 minutes.
    3. Place each fillet on a warm plate, top with a few juicy, split cherry tomatoes.
