    Thai beef meatballs with carrots and salad onions

    A great midweek supper dish with red curry paste and chilli sauce

    Serves: 4


    • 1 egg
    • 30g fresh white breadcrumbs
    • 1 garlic clove, finely chopped
    • 3 essential Waitrose salad onions, thinly sliced
    • 2 carrots, sliced lengthways
    • ½ tbsp vegetable oil
    • 3 tbsp sweet chilli sauce
    • 500g essential Waitrose British beef lean mince
    • 3 tbsp Cooks’ Ingredients thai red curry paste


    1. Preheat the oven to 200°C, gas mark 6. Toss the sliced carrots in the vegetable oil and 1 tbsp sweet chilli sauce and roast for 10 minutes.
    2. In a large bowl, mix the beef mince, curry paste, egg, breadcrumbs and garlic with your hands until well combined. Season and shape into 16 small meatballs; add to the roasting tin with the carrots.
    3. Pour over the remaining chilli sauce; turn to coat and bake for 18–20 minutes. Serve with steamed white rice, with the salad onions sprinkled over
