    Tomato, Chicken and Butter Bean Cassoulet

    Seeds of Change Fresh Cherry Tomatoes with Basil and Parmesan Sauce is 100 per cent organic and is made with sweet tomatoes and plenty of fresh basil for an intense flavour and rich colour. It works well in pasta and in casseroles and other baked dishes, such as this hearty family meal. Made with all organic ingredients, you can prepare it in minutes, then just leave it to cook.

    • 4 tbsp organic olive oil
    • 1 pack Waitrose Fresh Organic British Chicken 4 Thighs
    • 1 pack Waitrose Fresh Organic British Chicken 4 Drumsticks
    • 1 organic red onion, sliced
    • 150g organic chestnut cup mushrooms, quartered and washed
    • 400g can Biona Organic Butter beans, drained and rinsed
    • 350g jar Seeds of Change Organic Fresh Cherry Tomatoes with Basil and Parmesan Sauce
    • 75g fresh organic breadcrumbs


    1. Preheat the oven to 180°C, gas mark 4. Heat 2 tablespoons of the oil in a large frying pan. Add the chicken thighs and drumsticks and fry gently for 5 minutes until lightly coloured. Remove from the pan with a slotted spoon and drain on kitchen paper, then arrange in a deep ovenproof casserole. Add the red onion to the pan and fry for 3 minutes until softened. Add the mushrooms and fry for a further 2 minutes.
    2. Tip the vegetables over the chicken and add the butter beans and tomato sauce. Half-fill the sauce jar with water, swirl it around and add to the dish. Season lightly with salt and freshly ground black pepper and stir the ingredients together.
    3. Cover and cook in the oven for 45 minutes. Mix the breadcrumbs with the remaining olive oil in a bowl until coated. Sprinkle over the cassoulet and return to the oven, uncovered, for a further 20 minutes until the topping is pale golden. Serve with fresh, lightly boiled broccoli.

    Cook's tips

    Use a casserole dish that contains the ingredients fairly snugly so that the breadcrumb crust turns quite golden during baking.

    This dish can be assembled, ready to cook, up to the end of step 2. Cover with clingfilm and chill in the fridge for 4-6 hours until ready to cook as directed in step 3.

    Note: Wash hands, equipment and work surfaces after handling raw poultry.
