    Tomato and Basil Flan

    • Vegetarian

    • Total time: 1 hour 20 minutes 60 minutes 20 minutes

    Serves: 8, as a starter


    • 800g tomatoes
    • 1 tbsp olive oil, plus extra for greasing
    • large handful basil leaves, torn into pieces
    • Salt and freshly ground black pepper
    • 9 medium eggs
    • 1 tbsp flour, sifted, plus extra for dusting


    1. Preheat the oven to 180ºC, gas mark 4.
    2. Oil a 20cm-square tin (or round tin of similar size) and dust with flour.
    3. Blanch the tomatoes in just-boiled water for 1 minute, then peel, deseed and chop them.
    4. Heat the olive oil in a large pan over a medium heat and add the tomatoes and basil. Cook until the tomatoes 'sink' into a thick sauce, which should take about 8 minutes. Season.
    5. Beat the eggs, sift in 1 tbsp flour and mix. Season. Stir into the tomato mixture and pour into the prepared tin. Place in a large roasting tin, pour in boiling water to come half way up the sides of the tin and bake for 40 minutes, or until the egg mixture is just set. Serve in slices, hot or cold with a basil vinaigrette.
