Tomato and Feta Falafel Burgers

Ingredients

2 tbsp olive oil

½ small red onion, finely diced

410g tin chickpeas, drained and rinsed

75g Cypressa Greek feta
-
50g Waitrose supreme salsa

½ x 20g pack coriander

1 egg yolk
Method

Heat 1 tbsp oil in a large non-stick frying pan over a high heat and fry the onion for 5 minutes, or until softened and golden.

Spoon the onion and remaining ingredients into a food processor and blitz to a thick paste. With damp hands, shape 2 large burgers.

Heat 1 tbsp oil in the frying pan and fry the burgers, without moving or turning them, for 5 minutes or until golden on the base. Carefully turn the burgers and cook for a further 5 minutes or until golden on both sides. Serve in burger buns with plenty of salad.
