    Trofie with Goat's Cheese and Lemon

    This pasta dish needs no accompaniment, other than perhaps a dressed tomato salad.

    • Cooking time: 15 minutes
    • Total time: 20 minutes 20 minutes

    Serves: 2


    • 200g Waitrose Trofie dried pasta
    • 150g Capricorn Goat's Cheese
    • 25g slightly salted butter
    • 2 tbsp extra virgin olive oil
    • 2 cloves garlic, thinly sliced
    • Finely grated zest of 1 lemon, plus 2 tbsp juice
    • 50g pack wild roquette


    1. Preheat the grill to high. Cook the pasta according to pack instructions.
    2. Meanwhile, cut the goat's cheese into thick slices and place on a foil-lined grill rack. Grill for 4-5 minutes until pale golden and starting to melt.
    3. In a small saucepan, melt the butter with the oil and briefly fry the garlic. Add the lemon zest and juice. Remove from the heat.
    4. Drain the pasta and return to the pan. Add the roquette, garlic butter mixture and a little black pepper and heat through for 1 minute. Transfer to warmed serving plates and serve topped with the toasted goat's cheese.
