    Trout and Oriental Noodles

    • Preparation time: 10 minutes
    • Cooking time: 5 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 4


    • 2 whole fresh rainbow trout, filleted
    • 250g pack Sharwood's Chinese Fine Egg Noodles
    • 2 tbsp sesame oil
    • Juice of 2 limes
    • 1 bunch salad onions, trimmed and sliced
    • 1 cucumber, halved, deseeded and sliced


    1. Place the fish in a shallow dish, add 2 tbsp cold water and cover with microwave clingfilm. Pierce once and microwave on medium power for 5 minutes. Remove from the heat, then drain and flake the flesh from the skin, removing any bones.
    2. Cook the noodles in a large pan of boiling water for 3 minutes, then drain.
    3. Toss the noodles in a deep bowl with the oil, lime juice, onions and cucumber. Stir in the flaked fish and serve.
