    Tuna and Cannellini Bean Salad

The creaminess of the beans and the soft texture of this superior Amalfi tuna go beautifully with the fresh crunch of the cucumber and radish. Cannellini beans are a good source of all-important fibre, while the tuna provides unsaturated fats.

    • Preparation time: 15 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 2

    • 410g can cannellini beans, drained and rinsed
    • 190g jar Amalfi Fillets of Tuna in Olive Oil, drained, 2 tbsp of oil reserved
    • 1 pack fresh basil, cut into strips
    • ½ small cucumber, diced
    • 150g pack radishes, halved
    • ½ red onion, finely sliced
    • 2 tbsp balsamic vinegar

    1. Place the cannellini beans in a bowl. Flake the tuna and add it to the beans.
    2. Add the basil to the bowl, with the cucumber, radishes and onion. Season and mix well.
    3. Just before serving, drizzle the salad with the vinegar and the reserved olive oil from the tuna. Serve with crusty bread, such as poppy seeded batard.
