    Turkey Baguette with Cranberry Dressing

    Don't save turkey just for Christmas. Try the succulent organic hand-carved turkey available from the service counter. It's perfect for summer lunches, picnics and packed lunches.

    • Total time: 10 minutes 10 minutes

    Serves: 2


    • 1 freshly baked organic white baguette
    • 2 tbsp organic extra virgin olive oil
    • 80g bag Waitrose Organic Wild Rocket
    • 200g Waitrose Hand Carved Organic Turkey, sliced
    • 2 tbsp Waitrose Wild Cranberry and Burgundy Sauce
    • 1 tbsp freshly squeezed juice from an organic lemon
    • Freshly ground black pepper
    • 2 tsp fresh organic tarragon, chopped


    1. Split the baguette lengthways but do not cut all the way through. Open out and brush both sides with olive oil.
    2. Pile in plenty of rocket then layer with the sliced turkey and trim to fit.
    3. Mix the cranberry sauce with the lemon juice, pepper and tarragon and spoon over the turkey.
    4. If there is room, add some more rocket. Cut the baguette in two and serve with Waitrose Organic Potato Crisps.

    Cook's tips

    If you don't intend eating the turkey on the day it is purchased, ask the sales assistant to cut it in one piece so that you can then carve just before serving. This will ensure that none of the flavour is lost.


    Cut some of the turkey into cubes and toss with freshly boiled new potatoes. Serve on a bed of chicory and dress with Waitrose Wild Cranberry Sauce and freshly snipped chives.
