    Valentina's Limoncello

    Italian home-made Limoncello uses alcohol that is 95 per cent proof, clear and pure, which is unavailable in the UK. Use a strong, neutral-tasting vodka - it works just as well.


    • Zest of 8 large, unwaxed lemons, carefully pared to include no pith
    • 1 litre Waitrose Vodka
    • 800g caster sugar
    • 1 litre water


    1. Place the lemon zest in a large container with the vodka, seal and leave to stand for 20 days, turning regularly.
    2. After 20 days, boil the sugar and water together to make a thin syrup. Cool completely, add to the vodka and stir thoroughly. Strain, bottle and cork. It can be drunk after 24 hours and is best kept in the freezer and served chilled. It is also delicious trickled over ice cream.
