Veggie sausage & mixed grain cassoulet

2 tsp olive oil
300g pack Linda McCartney’s 6 Vegetarian Chorizo & Red Pepper Sausages
2 red onions, thinly sliced
4 cloves garlic, crushed
400g can cannellini beans
2 tsp chopped rosemary
¼ tsp ground cloves
2 tbsp sun-dried tomato paste
250g pack Waitrose Love Life Spelt, Quinoa, Red Rice & Wild Rice
3 classic vine tomatoes, diced
1. Heat the oil in a large saucepan and briefly fry the sausages until browned, about 3 minutes. Lift them out of the pan and set aside. Add the onions and fry for 5 minutes, adding the crushed garlic for the last couple of minutes. Halve the sausages lengthways.
2. Drain the beans and add to the pan. Fill the empty can with water and add to the pan with the rosemary, cloves, tomato paste, sausages and a little seasoning. Bring to a gentle simmer, cover and cook for 15 minutes.
3. Stir in the mixed grains and tomatoes and cook for a further 5 minutes until very hot.
For meat lovers, substitute with full-flavoured sausages such as Waitrose Toulouse Sausages With Smoked Bacon, Red Wine & Garlic.
