    Whole Grilled Mackerel with Cucumber And Dill Salad

    The griddle pan is an important beast – it’s brilliantly versatile and gives food a great charcoal-tinged flavour. I am inordinately fond of mine, which sits so well across two gas rings, providing ample griddling space.

    • Preparation time: 25 minutes, plus salting
    • Cooking time: 20 minutes
    • Total time: 45 minutes 45 minutes

    Serves: 6


    • 3 Cucumbers
    • 3 tsp Sea salt
    • 1 tbsp Caster sugar
    • 1 tbsp White wine vinegar
    • 2 tbsp Dijon mustard
    • 7 tbsp Extra virgin olive oil
    • 2 tbsp Chopped dill
    • 6 Fresh mackerel, left whole but gutted, cleaned and fins removed
    • 2 tbsp Mild olive oil
    • 3 Lemons, halved


    1. Several hours in advance – at least three is ideal – prepare the cucumber salad. Peel the cucumbers, cut them lengthways and remove the seeds. Cut the cucumbers on a steep diagonal into slices that are around 5mm thick. Toss with 2 tsp sea salt in a bowl and leave to sit for an hour or three.
    2. To make the dressing, dissolve the sugar in the white wine vinegar in a bowl, stir in the dijon mustard and whisk well. Carefully add the extra virgin olive oil. Wash the cucumber, drain thoroughly and pat dry with a clean cloth. Toss with the dressing and chopped dill, and set aside.
    3. When ready to eat, preheat a griddle pan over a medium-high heat. Brush the mackerel with the mild olive oil and season evenly with sea salt. Lay the fish on the griddle pan and cook undisturbed for 5 minutes, until lightly blistered and charred. Carefully turn and cook for 5 minutes more. It may be wise to do the cooking in two lots, as fish do not grill appily when sat side by side in too close proximity.
    4. Serve the mackerel on plates, with the cucumber salad and lemon halves.
