    Wholemeal Walnut Loaf

    Serve this deliciously rich, walnut-filled wholemeal loaf with cheese, such as Cashel Blue or goat's cheese.

    • Total time: 55 minutes, plus proving 55 minutes

    Makes: 1 large loaf

    Ingredients

    • 200g walnut pieces
    • 700g Waitrose Very Strong Canadian Wholemeal Bread Flour
    • 450ml lukewarm water
    • 2 tbsp French walnut oil
    • 1 tbsp clear honey

    Method

    1. Toast 200g walnut pieces in an oven preheated to 180°C, gas mark 4 for 8-10 minutes until lightly browned, then leave to cool. Place the ingredients for the basic recipe (see basic white bread recipe) (replacing the white flour with 700g Waitrose Very Strong Canadian Wholemeal Bread Flour) in a mixing bowl with the walnuts. Combine thoroughly then mix to a firm dough with 450ml lukewarm water mixed with 2 tablespoons French walnut oil and 1 tablespoon clear honey.
    2. Knead as in the basic recipe. Shape the dough into a neat ball and place on a lightly greased baking sheet. Slip the sheet into a bag as before and leave to prove until doubled in size. Bake in an oven preheated to 200°C, gas mark 6 for 35 minutes until golden brown. Test as in the basic recipe then transfer to a wire rack and leave to cool.
