Zingy prawn & charred Gem salad

1 medium carrot, shaved into ribbons
1 fresh lime
2 little gem lettuces, each cut into quarters
3 tbsp Waitrose Fresh and Spicy Lime & Amarillo Chilli Dressing
140g pack Waitrose 1 Indonesian Tiger Prawns
1 Waitrose 1 Perfectly Ripe Avocado, peeled, stoned and sliced
Coriander, to serve (optional)
1. Toss the carrot with 1 tbsp lime juice, season and then set aside.
2. Heat a griddle pan. Brush 1 tbsp of the dressing over the cut sides of the lettuce wedges. Put the wedges into the pan cut side down and cook for 1-2 minutes until charred. Using tongs, turn the lettuce and repeat.
3. Place the lettuce wedges on a large plate and leave to cool for a few minutes. Scatter the lime-pickled carrot, prawns and avocado over and around. Loosen the remaining 2 tbsp dressing with lime juice and then drizzle over the salad. Scatter with coriander if using.
