    Peanut and pecan granola

    Peanut and pecan granola

    • Total time: 55 minutes

    Makes: about 750g

    Ingredients

    4 tbsp crunchy peanut butter
    2 tbsp sunflower oil
    125ml maple syrup
    300g jumbo porridge oats
    100g pecans, roughly chopped
    50g LoveLife mixed seeds
    100g LoveLife dried blueberries

    Method

    1. Preheat the oven to 150°C, gas mark 2. Mix the peanut butter, sunflower oil and maple syrup together in a large mixing bowl, then stir through all the remaining ingredients apart from the dried blueberries.

    2. Tip the mixture onto a large parchment-lined baking tray; spread in an even layer. Bake for 40 minutes, stirring halfway, until lightly crisp and golden. Stir through the blueberries, then return to the oven for a final 5 minutes; set aside to cool completely. Store in an airtight container for up to 1 month.
