She’s the schoolgirl who wowed the nation juggling exams with egg whites on The Great British Bake Off . Two years after exiting television’s most famous tent, Martha Collison is still baking. And baking. And baking.
With her regular Waitrose Weekend column, Waitrose TV videos and numerous charity engagements, Martha has also just written her first book,Twist, which promises ‘creative ideas to reinvent your baking’.
‘I wanted to create a new approach to baking,’ she explains. ‘It can almost be simplified down to the idea that you only really need one good recipe to be the base of all your bakes. There are so many books that tell you 10 different ways of making a chocolate cake, for example, but surely one has to be the best way? So I’ve spent a long time researching the best methods and ingredients, and then I’ve added flavours and textural twists to make it more interesting.’
