    Oat topped salmon

    • Total time: 20 minutes

    Serves: 2


    280g pack 2 Scottish salmon fillets
    50g rolled oats
    4 salad onions, thinly sliced
    Zest of 1 lemon
    2 tbsp low fat natural yogurt
    ½ x 25g pack parsley, chopped
    Fresh leaf salad, to serve


    1. Preheat the oven to 200°C, gas mark 6. Place the salmon in a small greased baking tin.

    2. Mix together the oats, salad onions, lemon zest, yogurt and parsley, season well and press onto the salmon. Bake for 15 minutes or until just cooked then serve with salad.
