Griddled tomato and mozzarella panini with chilli fries

Serves: 4
8 slices essential Waitrose White Medium Sliced Bread
25g essential Waitrose Unsalted Dairy Butter
3 tbsp sun-dried tomato paste
2 x 125g essential Waitrose Italian Mozzarella, drained and sliced
3 essential Waitrose Tomatoes, sliced
660g essential Waitrose American Style Oven Fries
½ tsp mild chilli powder
1. Preheat the oven to 230°C, gas mark 8. Spread each slice of bread with butter and griddle, buttered side down, for about 1 minute until golden. Spread the non-buttered side with sun-dried tomato paste.
2. Top 4 slices with the sliced mozzarella and tomatoes, then season. Top with remaining bread slices, paste side down. Transfer to a baking tray.
3. Place the fries on a baking tray and dust with chilli powder. Bake for 20 minutes, adding the panini for the last 15 minutes.
