How to make meringues

This is a recipe for a basic meringue using egg whites and sugar. I like them to be crisp on the outside and lovely and chewy on the inside. – Dhruv Baker
Makes: 8
4 large egg whites, from a pack of essential Waitrose eggs
200g caster sugar
1. Whisk the whites to stiff peaks
2. Add the sugar one tablespoon at a time until all is incorporated and you have a wonderful glossy thick meringue mix
3. Dollop eight spoonfuls onto baking parchment on a large baking tray, put into an oven preheated to 150C, gas mark 3 and cook for one hour.
