Lamb leg and halloumi skewers with tzatziki

Serves: 4
350g diced lamb leg
250g pack halloumi, cut into 2cm cubes
1 tbsp dried oregano
1 tbsp dried mint
1 red onion, cut into wedges
1 red pepper, deseeded and cut into chunks
1 lemon, zest, plus juice to serve
2 garlic cloves, grated
ΒΌ (one-quarter) tsp sweet smoked paprika
2 tbsp olive oil
200g tub tzatziki
1 Place the lamb, halloumi, oregano, mint, onion, pepper, lemon zest, garlic, paprika and 2 tbsp olive oil in bowl. Season and give everything a good stir; leave to marinade for 10 minutes.
2 Preheat the grill to high. Thread the lamb, onion, pepper and halloumi onto skewers. Cook under a hot grill (or on a hot barbecue) for 10-12 minutes, turning regularly until golden in places. Cut the zested lemon into wedges, to serve alongside, with a good dollop of tzatziki. Add some herbed couscous for a midweek meal, if liked.
