Omelette spaghetti with chilli prawns

1 tbsp oil
4 medium essential Waitrose Free Range Eggs, beaten
235g pack Waitrose Green Pak Choi, shredded
150g pack essential Waitrose Cooked King Prawns
1 tbsp sweet chilli sauce
1 tbsp chopped coriander
1. Heat half the oil in a 23cm frying pan and add
half the egg, swirling the pan to give a thin, even layer on the bottom. Heat for 1-2 minutes until cooked, transfer to a chopping board and repeat to make another omelette. Roll each one up and thinly slice into long, thin ribbons.
2. Heat the remaining oil in the same pan and fry the white parts of the pak choi, and prawns for 1 minute.
3. Add the green parts of the pak choi with the chilli sauce and cook for another minute until the prawns are piping hot. Spoon over the omelette spaghetti and sprinkle with coriander.
