Pork satay with rice noodle salad

Serves: 4
1 pork fillet, trimmed, about 450g
100g Thai Taste Satay Peanut Sauce
200g pack Thai Taste Folded Rice Noodles
1 carrot, coarsely grated
1 bunch salad onions, shredded
50g salted peanuts, roughly chopped
½ x 28g pack coriander, roughly chopped
1 tbsp sesame oil
1 tbsp white wine vinegar
1 tbsp Thai fish sauce
1. Cut the pork into long thin strips and mix with the satay sauce. Leave for 10 minutes, then thread onto 4 satay sticks. Place under a preheated grill for 12-14 minutes, turning halfway through, until cooked through.
2. Meanwhile, cook the noodles according to the pack instructions, drain and cool. Mix in the carrot, salad onions, peanuts and coriander. Whisk together the oil, vinegar and fish sauce, and toss into the noodles. Season to taste, and serve with the pork satays.
