Pork burgers with beetroot and horseradish relish

Serves: 4
500g essential Waitrose British pork mince
1 onion, grated
5 sage leaves, chopped
1 tsp essential Waitrose olive oil
100g cooked beetroot, finely diced
1 tbsp essential Waitrose creamed horseradish
1 tbsp essential Waitrose soured cream
1 tbsp chopped dill
4 ciabatta rolls, halved
4 large lettuce leaves
1. Mix the pork mince with the onion and sage. Season and shape into 4 burger patties. Heat a griddle pan over a medium heat. Brush the burgers with the oil and griddle for 6 minutes on each side, until cooked through.
2. Meanwhile, mix the beetroot with the horseradish, soured cream and dill, then season.
3. Rest the burgers for 2 minutes. Place the halved ciabatta rolls, cut-side down, on the hot griddle until heated through. Put the burgers and lettuce leaves on one half of each roll, top with the beetroot relish and the other half of the rolls.
