    Raspberry & lemon knickerbocker glory

    Serves: 4

    Ingredients

    200g fresh raspberries
    150g Waitrose Lemon Loaf Cake, cut into 1cm cubes
    4 tbsp Waitrose Seriously Fruity Raspberry Coulis
    4 scoops Waitrose Seriously Intense Limoncello Italian Gelato ice cream
    4 scoops Duchy Vanilla Organic Ice Cream
    200ml double cream, lightly whipped

    TO DECORATE
    A selection of Cooks’ Homebaking decorations, such as freeze-dried raspberries, meringue pieces, pink sugar sprinkles, white chocolate sprinkles, mini marshmallows, popping candy, to decorate (optional) 

    Method

    1. Take 4 tall knickerbocker glory glasses. Scatter a few of the raspberries and cubes of lemon cake into the bottom of each one. Drizzle with a little raspberry coulis.

    2. Top each with a scoop of limoncello ice cream, followed by more raspberries, cake and coulis, then a scoop of vanilla ice cream and a few more raspberries.

    3. To decorate, spoon or pipe on the cream, and add more coulis and raspberries. Scatter with your choice of sprinkles, mini marshmallows, popping candy, etc, and serve with long spoons.
