Smoked salmon & lemon rice salad

150g essential Waitrose Whole Grain Easy Cook Rice
195g can essential Waitrose Sweetcorn, drained
Zest and juice ½ essential Waitrose Lemon
4 essential Waitrose Salad Onions, sliced
100g essential Waitrose Scottish Smoked Salmon, shredded
½ x 230g pack essential Waitrose Sour Cream And Chive Dip
1. Cook the rice in boiling water for 20-25 minutes until tender, then drain and cool completely.
2. Mix in the sweetcorn, lemon zest and juice, salad onions and salmon. Stir in the sour cream dip and serve.
