    Tuna, lemon and basil spaghetti

    Fresh, light flavours and ready in 15 minutes

    Ingredients

    • 150–200g essential Waitrose spaghetti
    • 225g jar Waitrose Albacore Tuna in Extra Virgin Olive Oil
    • 1 tsp Cooks’ Ingredients capers, chopped
    • Grated zest and juice of 1 lemon
    • ½ x 25g pack fresh basil

    Method

    1. Add the spaghetti to a large pan of boiling water for 10 minutes until just cooked. Drain.
    2. While the pasta is cooking, drain the tuna, reserving the oil, and flake the fish. Mix the flaked fish with the capers, lemon zest and juice and most of the shredded basil. Toss the drained pasta with the tuna mixture and 2 tablespoons of the reserved oil. Season, garnish with the reserved basil and serve.

    Cook's tips

    Using an alternative pasta such as penne, this recipe could be served cold as a salad. You can also add chopped black olives and halved cherry tomatoes. For a lower-fat alternative, use a can of tuna in spring water.
