Ingredients
400g plain flour
½ tsp bicarbonate of soda
½ tsp baking powder
½ tsp salt
160g unsalted butter, softened
2 small oranges, zest grated
85g light soft brown sugar
85g caster sugar
2 medium eggs, lightly beaten
200g white chocolate, chopped into chunks
Method
Preheat the oven to 180°C/gas mark 4, and liberally butter two baking trays.
Sift the flour, bicarbonate of soda, baking powder and salt into a bowl and set aside. Put the butter, orange zest and sugars in a bowl and beat with an electric whisk until pale and fluffy. Still beating, gradually add the eggs, beating between each addition. Don't rush or the mix will split.
Fold in the flour mixture then mix in the chopped chocolate. The dough will be quite stiff.
Take walnut-sized lumps of dough, roll between your palms then gently flatten. Place them, spaced well apart, on the baking sheets. Bake for 10-12 minutes or until the edges are lightly coloured but the centres are soft.
Allow to rest for a minute or two before cooling on a wire rack. Eat immediately or store in an airtight tin.
