Preheat oven. Empty pork belly and cooking juices into a suitably sized ovenproof dish. Cover the dish with foil, and place into the oven for 15 mins. Remove pork belly from the oven, discard foil, and place the crackling pieces onto a baking tray. Drain the cook juices from the pork belly, retaining for future use. Slice pork belly in half to form two portions, ensuring the apple pieces are shared between both halves. Return pork belly pieces along with the crackling to the oven uncovered for a further 15 mins. Meanwhile, prepare the sauce by emptying the sachet of cider jus into a cup or small pan. Add the cook juices, and stir. Heat in a microwave, or carefully in a pan over a low heat. Remove pork belly from the oven, and place onto a plate. Dress the pork with the heated sauce, and finish with the crackling pieces. (Time 30 mins, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
