Ingredients

  • 4 ripe peaches
  • 2 tbsp clear honey
  • 2 tbsp light brown soft sugar
  • ½ tsp vanilla bean paste
  • 150ml Waitrose Pure Apple Juice
  • 8 sprig/s thyme, plus more to serve (optional)
  • Amaretti biscuits, to serve
  • Vanilla ice cream or sweetened crème fraîche, to serve

Method

  1. Preheat the oven to 200ºC, gas mark 6. Halve the peaches and remove the stones. Stir together the honey, sugar, vanilla and 2 tbsp of the apple juice. Put the peaches in a small roasting tin or gratin dish. The halves must lie in a single layer, cut-side up. Spoon the sugar mixture over the peaches, then scatter over the thyme.

  2. Heat the remaining apple juice in a small pan over a medium heat until just below boiling, then pour it around the peaches.

  3. Bake for 20-25 minutes, or until the peaches are soft and have caramelised in patches. You might need longer – it depends on how ripe they are. Spoon the cooking juices around the peaches and serve with the amaretti, ice cream or slightly sweetened crème fraîche, and a sprig of thyme, if liked.
