Ingredients

100ml Lillet Blanc wine-based apéritif
25ml fresh grapefruit juice
2 sprig/s lemon thyme
100ml Indian tonic water, to top up
1 pink grapefruit slice

Method

Put the Lillet Blanc, grapefruit juice and 1 sprig of lemon thyme in a cocktail shaker. Fill with ice and shake until very cold. Strain into a large, ice filled wine glass and top up with tonic water. Add the grapefruit slice and the remaining sprig of lemon thyme to serve.
