Ingredients

  • 450g mixed tomatoes (preferably different colours and sizes)
  • tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil

Method

  1. Cut the tomatoes into even-sized chunks; arrange on a platter or in a large, shallow bowl. Sprinkle with salt, drizzle with the vinegar and olive oil, then set aside for at least 10 minutes before serving at room temperature.
