Cajun salmon, rice & beans
Pour coconut milk & 200ml vegetable stock in a large pan & bring to the boil. Add 200g rice, beans & 2 tbsp chopped thyme, cover & simmer for 20 mins until tender, adding 50g peas for the last 5 mins. Place 4 salmon fillets on greased baking tray, sprinkle with 2 tsp Cajun seasoning & drizzle over 1 tbsp honey. Bake for 10 mins. Serve with the rice mix.
