Pork with apricots & lentils
Heat 1 tbsp oil in a frying pan & fry steaks for 5 mins turning once. Add 250ml stock, 75g halved apricots, 400g drained lentils, 2 tsp mustard & 2 sprigs of thyme & cover. Simmer for 15 mins, stirring occasionally until the pork is cooked through. Remove the thyme. Season & sprinkle with 1 tbsp thyme leaves & serve with green beans.
