    Bacon chilli ratatouille

    • Total time: Ready in 30 minutes 30 minutes

    Serves: 4

    Ingredients

    1 tbsp olive oil
    175g essential Waitrose Unsmoked British Back Bacon, diced (6 rashers)
    1 essential Waitrose Onion, chopped
    1 essential Waitrose Red Pepper, diced
    1 essential Waitrose Courgette, sliced
    1 essential Waitrose Aubergine, diced
    1 tsp mild chilli powder
    400g can essential Waitrose Chopped Tomatoes

    Method

    1. Heat the oil in a large saucepan and fry the bacon and onion for 5 minutes. Stir in the pepper, courgette and aubergine and fry for 3 minutes. Add the chilli and cook for 1 minute.

    2. Stir in the tomatoes, cover and simmer for 15 minutes, then season. Serve with mash or new potatoes
