    Chicken & vegetable pot roast

    1 tbsp vegetable oil
    800g pack essential Waitrose British Chicken Drumsticks, scored
    1 essential Waitrose Leek, sliced
    500g essential Waitrose Sweet Potatoes, diced
    200g essential Waitrose Cup Mushrooms, quartered
    400ml hot chicken stock
    1 tbsp chopped fresh sage


    1. Preheat the oven to 220ºC, gas mark 7.

    2. Heat the oil in a large frying pan and brown the chicken for 4-5 minutes. Transfer to a large casserole dish, add the remaining ingredients and season. Cover and bake for 35 minutes. Check the chicken is cooked through with no pink meat.
