Creamy basil chicken & rice

Pack of 2 essential Waitrose British Chicken Breast Fillets, thinly sliced
25g pack fresh basil, shredded
2 tbsp essential Waitrose Olive Oil
300g essential Waitrose Easy Cook Long Grain Rice
1 essential Waitrose Onion, chopped
200g frozen essential Waitrose Garden Peas, defrosted
250g tub essential Waitrose Italian Mascarpone
1. Mix the chicken, half the basil and oil together, season. Cook the rice in boiling water for 12-15 minutes, then drain.
2. Meanwhile, fry the onion and chicken for five minutes, add the peas and cook for 1 minute (the chicken should be cooked through).
3. Stir in the mascarpone, cook for 1 minute; season. Stir in the rice and scatter over the remaining basil.
