Creamy Ham and Courgette Pasta

Ingredients

300g Waitrose Trofie Pasta or Fusilli Pasta

1 tbsp olive oil

1 finely sliced onion
-
2 courgettes
-
125g ham, or left-over gammon

125g pack Waitrose Le Roulé Full Fat Soft Cheese

Serve with a handful of rocket leaves
Method

In a pan of boiling water, cook 300g Waitrose Trofie Pasta or Fusilli Pasta, according to the pack instructions.

Heat 1 tbsp olive oil in a frying pan and gently cook 1 finely sliced onion for
3-4 minutes until softened. Trim 2 courgettes and coarsely cut into strips, then add to the pan and fry for a further 3-4 minutes, until softened.

Cut 125g ham, or left-over gammon into strips and add to the frying pan. Fry for a further
1-2 minutes until the ham has cooked through. When cooked, partially drain the pasta, leaving some of the water clinging to it. Stir the onion and courgette mixture into the pasta along
with a 125g pack Waitrose Le Roulé Full Fat
Soft Cheese, cut into cubes. Stir until combined
and the cheese mixture has melted through. Serve with a handful of rocket leaves.
