Meatball stroganoff with spinach rice

300g essential Waitrose Long Grain Rice Easy Cook
200g pack Waitrose Duchy Organic Spinach
1 tbsp oil
300g pack Waitrose Duchy Organic 20 British Beef Meatballs
1 Waitrose Duchy Organic Brown Onion, sliced
250g pack Waitrose Duchy Organic Chestnut Mushrooms, sliced
1 tbsp Waitrose Duchy Organic Wholegrain Mustard With Honey
300ml tub half fat soured cream
½ x 25g pack chives, chopped (optional)
1. Cook the rice in boiling water according to pack instructions, adding the spinach for the last minute until wilted. Then drain.
2. Meanwhile, heat the oil in a large frying pan, and fry the meatballs and onion for 5 minutes. Add the mushrooms and cook for a further 4-5 minutes.
3. Off the heat, stir in the mustard and cream, season and sprinkle over the chives, if using. Serve with the rice.
