This tex-mex classic is rich in fibre.
1 tbsp essential Waitrose Vegetable Oil
2 essential Waitrose British Chicken Breast Fillets, thinly sliced
1 essential Waitrose Green Pepper, sliced
1 essential Waitrose Red Onion, sliced
30g sachet Discovery Fajita Seasoning Mix
320g pack Discovery Wholemeal 8 Tortillas
400g can essential Waitrose Chopped Tomatoes
50g essential Waitrose English Medium Cheddar, grated
1. Preheat the oven to 200ºC, gas mark 6.
2. Heat the oil in a frying pan and fry the chicken, pepper and onion for 5-6 minutes. Add the fajita mix with 4 tbsp water and cook for 1 minute.
3. Divide the mixture between the tortillas and roll up. Place in an ovenproof dish and pour over the tomatoes, scatter with cheese and bake for 25-30 minutes until golden and the chicken is cooked through.
