Roasted chicken with chorizo and cabbage

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp brandy or sherry
  • 1 pointed spring cabbage, cored and shredded
  • 1.2kg pack essential Waitrose 4 British Chicken Quarters
  • 4 large cloves garlic, unpeeled
  • ½ x 250g pack Unearthed Spanish Mini Cooking Chorizo Sausages, diced

Method

  1. Heat the oven to 200°C, gas mark 6. Place the chicken quarters in a heavy-based, shallow, ovenproof casserole dish, then add the garlic cloves and diced chorizo. Sprinkle with the olive oil, brandy or sherry and seasoning. Roast for 15 minutes
  2. Remove the chicken from the oven and lift out of the pan. Stir the cabbage into the garlic and chorizo, then place the chicken back on top. Return to the oven for 30–35 minutes until the chicken is golden and cooked through, with no pink meat
  3. Remove the chicken from the pan and keep warm. Slip the garlic cloves out of their skins and mash gently with a fork. Stir into the shredded cabbage and chorizo, check seasoning and serve with the chicken and some mashed potato.

Made this at the weekend and it was lovely. Just add more brandy to ensure the cabbage doesn't burn. So easy and was scrumptious!

Another thing to add - KEEP AN EYE ON THE CABBAGE!! Once it goes in it's incredibly easy to burn.. [still tastes good though if it does go a little scorched]

Delicious - made this with chicken breasts and chorizo and then again with two Tolouse sausages chopped up. We preferred the sausages. Had to add a little water to the pan to stop the cabbage drying out though.

Hi, Yes when cooking this for two I just made it exactly the same way and then just put two chicken breasts on top instead of 4 quarters. The cabbage and chorizo is so yummy both me and my husband have no trouble finishing it off just the two of us!

Love this but have you used the full amount of cabbage and chorizo with 2 portions of chicken. Used chicken breasts rather than quarters. Great flavours!

Had this at a friend's house and it was so yummy am making it for myself. Have used chicken breasts with no skin with no trouble. Not sure if you really need to use the specific chorizo listed as it's quite expensive and you only use half.

Made this last night - it was a hit with the whole family. Our local Waitrose didn't have chicken quarters so I used chicken breasts (skin on) which worked fine.
