Salted caramel sauce

Serves: 3 - 4
100g granulated sugar
45g unsalted butter, chilled and diced
60ml whipping cream
½ tsp salt
1. Place a small saucepan over a low heat and add the granulated sugar. Gently increase the heat to high and leave the sugar to melt completely.
2. Once a smooth amber sauce is achieved carefully add the butter cubes and stir gently as they melt into the hot sugar.
3. Next, stir in the whipping cream - be careful as the cream will react with the hot sauce and can spit as it mixes into the sugar. Allow the mixture to come back to the boil and cook for 1 minute.
4. Take the pan from the heat and add the salt. Transfer to a jug until ready to serve.
