    Thyme-Roast Potatoes

    • Total time: 1 hour 20 minutes 60 minutes 20 minutes

    Serves: 4

    Ingredients

    • Salt and pepper
    • ½ x 15g pack fresh thyme
    • 750g Maris Piper or King Edwards potatoes
    • 3 tbsp olive oil

    Method

    1. Preheat the oven to 180°C, gas mark 4. Peel and cut 750g Maris Piper or King Edwards potatoes, into large chunks.
    2. Cook in large pan of boiling water for 3 minutes. Meanwhile, pour 3 tbsp olive oil into a roasting tin and place in the oven until hot. Drain the potatoes and tip them immediately into the hot fat. Turn the potatoes to coat in the fat and sprinkle over some salt and pepper. Tuck in ½ x 15g pack fresh thyme, broken into sprigs. Roast for about 1 hour, turning the potatoes halfway through cooking.
