Preparation & Storage
- Summer Berry Shortcake (serves 6)125g butter60g caster sugar180g self raising flour180g double cream (whipped)150g Summer Berry CompotePreheat the oven to 190°C. Cream the butter and sugar together until smooth and then knead in the flour. Press the mixture evenly into a medium size loose bottom tin. Bake for 25-30 minutes or until golden brown and then carefully transfer onto a cooling rack. Once cooled, spread the cream onto the biscuit ensuring the cream dips slightly in the centre and then gently place the summer berry compote on top of the cream. Sprinkle with icing sugar and serve.
Store in a cool dry place refrigerate after opening and consume within 7 days.
