Preheat the oven to 180oC, gas mark 4. Lightly grease 2 baking trays. Roll out the gingerbread dough on a floured surface to �cm thick. If the dough has become too firm, microwave on full power for 3-5 seconds. Using the gingerbread man cutter, cut out 18 gingerbread men and place on the trays. Press in the currants to make buttons and bake for 7-8 minutes until golden. Allow to cool slightly before transferring to a cooling rack. Cool completely. Decorate using the icing pen. (Time 7 mins Oven: 180�C, Gas: Gas Mark gas 4)
