Highly aromatic, with notes of citrus and spice. A warming herb widely used in soups, sausages, marinades and stuffings, its strong flavour makes it ideal for slowly cooked dishes such as casseroles, roasts and soups. A favourite in Mediterranean cuisine, it goes perfectly with tomatoes and is the main ingredient in Bouquet Garni and Herbes de Provence.
