Preheat oven. Remove all packaging. Allow the lamb to rest for 10 minutes to enable the colour to return and any containment odour to disappear. This does not affect the quality of the lamb. Place lamb in a roasting tray in centre of oven. Ensure surface of meat is thoroughly cooked. Leave to rest for 10-15 minutes before carving. (Time medium 25 mins per 500g + 25 mins, Well done 30 mins per 500g + 30 mins Oven: 180�C, Fan: 160�C, Gas: Gas Mark gas 4)
