    Crab stamp ’n’ go fritters

    These fritters are traditionally made with salt cod, but work well with crab. They are referred to as one of the original fast foods of Jamaica and can be seen sold at the roadside for breakfast.

    • Preparation time: 10 minutes
    • Cooking time: 10 minutes

    Serves: 2 people or 4 as a starter

    Ingredients

    100g Seafood & Eat It CornishWhite Crab

    100g Seafood & Eat It PottedCornish Crab

    1 medium Waitrose British Blacktail Free Range Egg, beaten

    2 tsp Busha Browne’s PukkaHot Pepper Sauce

    4 salad onions, finely sliced 25g plain flour

    25g fresh breadcrumbs

    1 tbsp oil

    50g Waitrose Watercress

    2 tbsp Hellmann’s Real Squeezy Mayonnaise

    1⁄2 tsp Busha Browne’s Pukka Hot Pepper Sauce

    Method

    1. Mix together all the fritter ingredients except the oil and watercress, season and divide into 8 pieces. With wet hands, mould into flat-round shapes.
    2. Heat the oil in a frying pan and fry the fritters for 1-11⁄2 minutes each side until golden.
    3. Meanwhile, mix the mayonnaise and pepper sauce and serve with the fritters on a bed of watercress.
