Chocolate muffins, sandwiched with sieved marmalade and moistened with Cointreau, layered with mandarin oranges and topped with chocolate mascarpone cream and chopped chocolate.

What makes it the ultimate summer Seriously From Waitrose dessert?

Heaven in a bowl for serious chocolate lovers! **I put this recipe on my blog last year; if this means it can't be used because of your T & C, no problem, just ignore my entry**

Ingredients

  • 4 double-choc-chip muffins
    200g Green & Blacks Maya Gold chocolate
    2 tins mandarin oranges in juice (drain and reserve juice)
    4 tbsp Cointreau
    3 tbsp orange marmalade (sieved to remove peel)
    250g mascarpone
    400g pot of vanilla custard
    275ml double cream

Method

  1. From the bottom upwards, in a glass bowl, layers of: sliced muffins; Cointreau and juice; marmalade; mandarins; chocolate cream (mascarpone, custard and melted chocolate mixed together); topped with quenelles of cream and chopped chocolate.
