    Black bean, avo & quinoa salad

    Ingredients

    75g Waitrose Love Life White, Black & Red Quinoa Seed Mix
    400g can black beans, drained and rinsed
    1 ripe avocado, diced
    1 Little Gem heart, shredded
    4 tbsp Cooks’ Ingredients Thai Sweet Chilli Sauce

    Method

    1. Cook the quinoa in boiling water for 15 minutes or until tender. Drain and mix in the beans with the avocado and lettuce.

    2. Mix in the sweet chilli sauce, season and serve.
